1 lb of italian sausage.
20 oz of frozen three-cheese tortellini.
32 oz of low sodium chicken broth.
2 cans of diced tomatoes (seasoned with basil, garlic and oregano).
8 oz of cream cheese or Neufchatel cheese.
Grated parmesan cheese for topping.
In a skillet, brown the meat and drain off the fat.
In the crockpot, place the sausage, tortellini, the tomatoes with juice and the broth.
Add the cream cheese to the pot in chunks and stir until well combined.
Cook on low for 3 ½ to 4 hours stirring halfway through and remove the lid for the last 30 minutes of cooking.
