Strawberry Pound Cake

If you are having a party or a special occasion, there’s nothing better than a good strawberry cake to serve for you guests! Check out this amazing cake!

You’ll Need (for the cake):

2 (10 ounce each) packages of thawed frozen sweetened sliced strawberries.
1 cup of butter.
2 cups of sugar.
4 eggs.
3 cups of all-purpose flour.
1 tsp of baking soda.
½ tsp of salt.
⅔ cup of buttermilk.
½ cup of chopped pecans (optional).
¼ tsp of strawberry extract.

You’ll Need (for the sauce):

1 ½ cups of confectioners’ sugar.
½ cup of sliced fresh strawberries.
½ tsp of vanilla extract.
¼ tsp of strawberry extract.
½ cup of butter.

How to:

Drain and chop the strawberries and keep ½ cup of the juice.
Cream together the butter and sugar in a large bowl until fluffy then add in the eggs one at a time while beating..
In a bowl, mix together the dry ingredients then add to the creamed mixture alternately with buttermilk while mixing.
Fold in the pecans, chopped strawberries and strawberry extract and mix until well combined.
In a greased and floured 10 in fluted tube pan, pour the batter and bake in a preheated oven to 325° for 75 minutes.
Let cool before removing to a wire rack.

To make the sauce, mix together the butter and ½ cup of strawberry juice in a saucepan. Add in the sliced strawberries and bring to a boil while stirring for 1 minute.
Turn off the heat, and mix in the extracts and confectioners’ sugar.
Glaze the cake while it’s still warm.
